Discover the hillsides of Vaux-en-Beaujolais, also known as Clochemerle, through its cuisine, its wines, and its local stories…

In a warm and relaxed atmosphere, Sandrine and Yannick welcome you into the centuries-old cellars of the Château de Vaux.

Come share a meal crafted by Chef Baptiste Fernandez of the restaurant L’Échanson, and dive into the passion of Yannick de Vermont, artisan winemaker.

Throughout the evening, Sandrine and Yannick will share insights into the art of food and wine pairing — each wine (mostly served in magnums) carefully selected to elevate every dish.

But first, starting at 7 p.m., enjoy a guided discovery walk “from the vineyard to the cellar.”
Yannick and Sandrine will take you through the heart of their vines to introduce you to their craft and passion as artisan winemakers.

    Why Baptiste Fernandez's cuisine ? We wanted to collaborate on this event with Baptiste because of the respect and the quality of the products used. His enthusiasm for Beaujolais wines in general and more particularly for our wines as well as our mutual friendship make him a worthy ambassador of our region.

    Your restaurant in a few words: culinary cellar, family spirit, work with fresh and short-circuit products, spotlight on Beaujolais wines with 40 different references. 

     

    Your signature dish: La Potence Beaujolaise (idea came up with Romain Barthe from the Auberge de Clochemerle, which recalls the friendliness of the establishment). 

     

    Why Yannick's wines? At L’Échanson, the winemaker/restaurant relationship is close to my heart. The quality of his work and the proximity of his cellar and his vines contribute to our collaboration.
